Bicol express is a rich and spicy Filipino dish made of pork cubes braised in coconut milk and chili peppers.

SASTAV
1 kašika ulja
1 mali crni luk, oljušten i iseckan
6 čena belog luka, oljušten i mlevenog
2 kašike škampi pasta
2 kilograma svinjskog stomak, iseći na trake
2 šolje kokosovog mleka
1 šolja kokos krema
1 šolja vode
12 do 14 Thai chili peppers, proizilazi i mlevenog
so i biber po ukusu

UPUTSTVO
U širokoj posudi na umerenoj vatri, toplote ulje. Dodaj crni i beli luk i kuvajte dok aromatična. Dodaj škampa pastu i kuvati uz povremeno mešanje, oko 5 minuta ili dok ne dobije braon boju.
Dodajte svinjetinu i kuvati uz povremeno mešanje, dok blago ne porumeni. Dodajte kokosovo mleko i vodu i dovesti do kuhanja. Kuvajte oko 10 do 15 minuta ili dok tečnost je smanjen.
Dodajte kokosovo pavlaku i ljute paprike. Nastavite da kuvate za oko 20 do 25 minuta ili dok svinjetina ne omekša i sos počne da pruži masti. Posolite i pobiberite po ukusu. Služiti toplo.

INGREDIENTS
1 tablespoon oil
1 small onion, peeled and chopped
6 cloves garlic, peeled and minced
2 tablespoons shrimp paste
2 pounds pork belly, cut into strips
2 cups coconut milk
1 cup coconut cream
1 cup water
12 to 14 Thai chili peppers, stemmed and minced
salt and pepper to taste

INSTRUCTIONS
In a wide pot over medium heat, heat oil. Add onions and garlic and cook until aromatic. Add shrimp paste and cook, stirring occasionally, for about 5 minutes or until it begins to brown.
Add pork and cook, stirring occasionally, until lightly browned. Add coconut milk and water and bring to a simmer. Cook for about 10 to 15 minutes or until liquid is reduced.
Add coconut cream and chili peppers. Continue to cook for about 20 to 25 minutes or until pork is tender and sauce begins to render fat. Season with salt and pepper to taste. Serve hot.
